This local favorite food truck operator opened its first brick and mortar location a few years back and quickly became a staple of downtown Minturn. Hungry diners order at the counter and seat themselves in a dining room playing upbeat music with walls covered in skateboard decks. The primarily Tex Mex menu offers everything from carne asada to Hippie Crack, which is a savory combination of red potatoes, grilled onions, peppers and cheese. Recently, a burger menu was added for those who want something different.
